The safest Linux kernels for Xen right now seem to be the SuSE
kernels.  The Gentoo folk have ported the SuSE Xen patches for generic
kernels @ http://code.google.com/p/gentoo-xen-kernel/downloads/list .

So I would take a vanilla kernel, apply the patch, and roll your own
kernel/initrd.
