The iSCSI initiator is still being worked on, so it hasn't made its way 
into documentation yet.  :)

To use it in a domU kernel (I do this), just build your kernel with the 
line:

pseudo-device iscsi

added near the bottom.  You'll also probably need to create the iscsi 
device in /dev.
