Yes. But you don't necesserely need to delete sendmail to install
something else.
The sendmail in /usr/sbin is just a wrapper which calls the rigth MTA.
see /etc/mailer.conf
If you really want to delete sendmail, it's all in /usr/libexec/sendmail
