default variables

Hi:
how can I tell the default values of some common
variables like MAKE_ENV, PREFIX, MAKE_PROGRAM, etc. ?
where are this values defined?
I've looked over mk.conf, bsd.pkg.mk, bsd.prefs.mk and
many other configuration files and I can not find this
variables,
