The usual way is to set INSTALL_MAKE_FLAGS in the package Makefile:

INSTALL_MAKE_FLAGS+=   ${MAKE_FLAGS} sysconfdir=${EGDIR:Q}

The ${MAKE_FLAGS} in front of the sysconfdir is only due to a misdesign 
in pkgsrc. Don't worry about that. :)
