You can use mk/find-prefix.mk for such purposees:
FIND_PREFIX:= PSTOTEXT_DIR=pstotext
.include "../../mk/find-prefix.mk"
#......
SUBST_SED.pstotext= -e 's|@PSTOTEXT@|${PSTOTEXT_DIR}/bin/pstotext|'
#......
