Thanks for input all. There appear to be two options:

The Intel IOP348 External Storage Design CRB + PCI-X graphics card. 
This looks like it's the fastest board. The snag is getting a graphics 
card that doesn't require an x86 binary-only driver. Roll on the 
Open Hardware Foundation. I'm trying to get a price on the board.

The Embedian APC-7117. This has video on board, but the processor
is only 400MHz. But the board is cheap enough that I might try it
anyway and see how I get on.

I've discounted the TeamASA products and derivatives as there doesn't seem to be
any video output options on those boards (unless I've missed something!)

I'm anticipating a bit of porting will be required with whatever I
end up with......
