On https://tow-boot.org/devices/pine64-pinebookPro.html, there are two
disk images that you can download. There is one for SPI specifically
that you write to an SD card and then boot from it. This system then
lets you write to the SPI.

I haven't followed through myself because I think I need to disable
the eMMC (which involves opening the device) to make the PBP prefer
booting from the SD card.
