Put this line in dhclient.conf:
supersede host-name "hostname.i.want";
This won't necessarily make that name publicly available in DNS though. For
that to work, your DNS server needs to support DDNS, and dhclient needs to
do some other things that I don't know if it does by default or not (I've
never had access to a DNS server that supports DDNS, so I can't tell you
for sure.
