I believe that with C610, C605, and C650, it was pretty much hit or
miss which was included. Apple didn't guarantee that it would have
it, so it was a bonus if it did. Commodity pricing probably played a
role here, & they used whatever chip they had a better supply of at
any given run. According to AppleSpec:
Model Centris Quadra
605 NA LC040
610 LC040 optional
650 optional FULL040
Notes on the Quadra 610 state that some shipped with LC and some with 040.
As for ethernet:

610 optional AAUI
650 optional AAUI
