Having just pulled my ip32 apart, I confirm it's a ds1687-5. Looking at the
datasheet, it's register-compatible with the 17287 -- century byte is
in the same spot, etc.

Very, very good idea. Additionally, according to the 17287 docs, there's
an embedded serial number that might be interesting :)
