Patch those documents to use docbook 4.2 instead? The differences between
4.1.2 and 4.2 should be very minor, and compatibility should remain (at least
backwards).
I don't know how gnucash-docs calls xsltproc, but add the --nonet option to
the call, and --catalogs too.

No. If this is really needed, modify the actual docbook-xml package to
install multiple versions, as the textproc/docbook one does.
