OK, setting USE_CANNA= NO in mk.conf still gives me:

bmake show-options 
These options are enabled by default: anthy canna gtk
These options are currently enabled: anthy canna gtk

with PKG_OPTIONS.uim=anthy gtk
in mk.conf as well.

Thoughts are welcome, I'll hit the sack for now.
I must say this is non-intuitive, though.
