Sure you can, you just don't want to under most circumstances. :-)
I've actually considered building something which builds a list of
disks and runs parallel fscks, somewhat like fsck now, except that it
gives some kind of display of disks done, yet to start, and in progress
(possibly some of them would be suppressed, depending on things like
how many disks are involved).
Of course, to do it fully right means hooking into the innards of fsck,
so each sub-fsck can report progress to the master process....
